Study of plant food

What is plant food?

A plant-based diet puts vegetables and other plant-based foods at the center of the dinner table. In this case, the “usual” composition of the diet is modified by replacing meat with products of plant origin. Such a diet serves to improve the eating habits of the population.

What is the problem of preservation of different types of food?

As with any new product, it is very important and necessary to analyze and understand the microbiological risks associated with raw materials, as well as their objective assessment.

How did lab’s experiments help find a solution?

Several tests were carried out directly during the sterilization process with different parameters of the thermal regime. Each experiment was subject to very strict monitoring. Organoleptic and microbiological analyzes of customers were used to select the cycle that was most suitable for the objectives.

In general, what was the purpose of laboratory tests?

Laboratory studies allow:
*Testing of a certain type of heat treatment (pasteurization/sterilization) of the product, and analysis of the effect of temperature on it (on organoleptic and visual characteristics) and on the packaging, or more precisely, its strength;
*Development of both types of heat treatment (cycle) at the bacteriological level (destruction of microorganisms by sterilization and pasteurization) and at the sensory/organoleptic level;
*The development of an opposite pressure system that ensures the integration of the package and its resistance to deformation during the heat treatment process.
